Well, think of Matroska like AVI: they're both just containers. It's
also DRM-Free, so if you can find a transcoder that'll read MKV files
(or you can remux it to AVI, and convert from there)...

Recompress the tracks, or strip out unnecessary tracks. Recompression
will reduce quality, however.
