Well, the only really good media players for OS X, in my opinion, are  
VLC and MPlayer, both of which support MKV out of the box. QuickTime  
can probably have a plug-in designed for it to read information from  
an MKV file (If they can do it for Ogg/Vorbis...), but it's far less  
efficient, and requires a lot more plug-ins to support more formats.  
So, in my opinion, there are already some good players that read MKV  
files. I think we need better muxing tools, though.
